I found that a bit gay TBH, I preferred it in RDR 1 where you could take a stagecoach/train ride wherever you wanted (if it had a road or a train station lol) and either skip the ride or enjoy the view. Though, you have zero control over the destination. I kind of thought cinematic camera would keep the wagon going, but for some reason I have to hold A to continue moving even after entering cinematic camera while holding A. In the case of Saint Denis due to its size however, they will carry you to: other part of Saint Denis or to Rhodes, and in the case you take the ride just outside of Saint Denis in the bridge near the Mayor to Lagras or to Van Horn if you take the ride in the farmland just north of Saint Denis. If you take a ride in Strawberry you go to Blackwater (even with Arthur), in Valentine to Emerald Ranch, in Rhodes to Saint Denis, in Van Horn to Annesburg, and in Annesburg to Van Horn. Now there's something I didn't know about. If you stay away from any guards on the train, you won't become wanted and can just ride indefinitely. Plus, despite not being able to buy train tickets at Benedict Point (let alone anywhere in New Austin), trains will randomly spawn piloted and boarded by NPCs all around New Austin. Other places I've often seen them pop in are just north of Annesburg, just east of the Ambarino Sign, east of Wallace Station, parked at Appleseed Timber Co (even after it's abandoned), on the west side of Bard's Crossing, northwest of MacFarlane's Ranch, north of Armadillo, and just south of Benedict Point. As for a specific method, I've no clue. They seem totally RNG based, as I've even seen trains all over New Austin even at night. Being near any major city, especially Annesburg and Rhodes, generally gets one to pull in within a minute or two. Some days I've seen so many in such a short span it seemed like they were just running relays on a single set of rails. Others it may be days in-game until I see one. There are timetables at the stations, but they are just decorative. I guess rockstar once thought of putting the trains on actual schedules, but like a lot of things in the game they decided to not do it properly. However, it looks like trains do spawn more often when you are approaching an station, not already waiting on one. In any case there is a train that do stop regularly for my experience, and is a train in Valentine just before sunrise. That train stops on the station (most trains that pass through a station when you are already waiting in don't stop for some stupid reason) and you enter can the wagons, sit in a chair and enjoy the ride.
