So much lag, anyone got any ideas?

I'm playing GTA Online on an Xbox one with a hardwired cat 8 cable (can handle up to 40Gig speeds) directly into a 8 port switch connected to my 1Gb fiber line...yet I still get crazy lag, especially the issue at the end of missions were the yellow circle does nothing. My scenery messes up regularly and I had to wait a few minutes outside my hanger yesterday just for the circle to appear so I could go in. It seems to be getting worse!

 

Checking my connection on my Xbox says:

 

Downloadload: 562.50 Mbps

Upload: 566.22 Mbps

Latency of 39ms

 

I would think I should be good. Any suggestions?

On PC there has been quite alot of lag over the past week but today seems to be a bit better.
