I think that it is useless to try to find when the reveal will come out, for GTA VI  Rockstar gonna break the rules for everything including their own rules. 
 

It could be reveal in December 18th, January 12th  …

At what stage of the game is the age category assigned? Has Rockstar already made such a move since the release of GTA Defective Edition? Something I associate (maybe wrongly) that Rockstar was doing something like that before the trilogy was announced..

At the very, very end. It's a build close to gold status that is rated, as that means it's content complete. The Trilogy was leaked from the Korean ratings board because it was close to be released lol.

We won't see GTA VI ratings until maybe 2 months before release.

If we go past November 7 without info bout VI then we can officially say that all hopes are lost. Of course after that date theres a chance but doubt they will announce it after investor call. If they did announce VI after investor call than that would be biggest trollface in T2 history. (Troll face in a way that investors are going to be trolled)

Yes, pretty much. If the investors don't get the benefit of knowing anything, we have no hope. We COULD still get an outline for next financial quarter of each of the companies' plans. Depending on the presentation, a Rockstar Games entry could mean they are preparing of making a financial decision that would affect the investors (positively, of course).
