Steam randomly updates

so i recently started modding and basically i created multiple files of the gta 5 directory and everytime i use a copy folder my steam just literally UPDATE (100 GB UPDATE I MEAN) every time can someone help me it will mean alot and i have 3 different copys 2 is in data and 2 is in steam apps
