In a straight line, yes. But for actual racing neither the Adder nor the 811 were ever the "fastest".

In stunt races the Deveste Eight is a good choice. It has a high top speed and gets a crazy speed boost in tubes if you have the right tires. It's also heavy; that's why others are ramming you probably. But there are other good choices.

If you have played all the stunt races before, the new ones won't have a checkmark. If you haven't, then you'll need to go by the names. Here is the current list: https://gta.fandom.com/wiki/Stunt_Races

When tunable update You need look manually :online/play job/Rockstar created/stunt races, i think they Will be placed along the old ones, maybe in the newswire they Will talk briefly about each track.

Someone will probably post the names of the new races in this thread. If not, you'd have to go through the list yourself until you find one that isn't on the old list: https://gta.fandom.com/wiki/Stunt_Races Maybe there's going to be a Plummet IV or Trench V or Gauntlet III, so you could check for these first.

I'm very excited to see what they came up with in terms of track layouts. I've played the living hell out of the stunt races when they originaly came out and i bet i'm going to do the same thing today.

The fastest car (in a strait line) is in the sports class. Its the Ocelot Pariah. (Think the vigilante is fastest overall but you can't join races with that)
