Other than some fairly weak gunner positions I'm struggling to think of ways the volatol is better than the alko.

100 bomb capacity, more realistic flight physics, higher top speed? 

They're still both crap lets be honest but we know the stealth function of the Alkonost is essentially useless and despite having a higher thrust value (too high in my opinion) it's not able to quite reach the same speeds the Volatol can. The Volatol won't "bleed off" as much of that speed from a nose-down attitude compared to the Alkonost either; the lower "thrust falloff" of the Volatol allows it to "cruise" more easily at those higher speeds.

Is the Volatol really the faster of the two? I've only flown it for that one heist setup mission a few times, but it feels agonizingly slow to me. Flew the Alkonost for the CP prep and it felt more like a normal aircraft--not spry, but I didn't want to commit suicide mid-flight just to get it over with. Not saying I don't trust you because it sounds like you have numbers, but I am surprised.

The Alko in freemode just don't act right and I just stole the prep R-86 and it isn't the same...

 

Think of the mission with the Volotal from act 3 too. The splash damage of the bombs seems to be incredibly boosted for the mission. Rockstar likes to do sh*t like this...

Yeah - the Alkonost has a high thrust value, so it's able to climb vertically indefinitely and accelerates / gets up to speed quickly. 
The Volatol doesn't have as much "thrust" but it does have a lower thrust "falloff" value, which means that it could be capable of having a higher top speed, and what it actually achieves will then rely on drag and the standard thrust value. 

Still, even though the Volatol is "sluggish" it flies far more realistically and actually gets about  10-15mph or so higher top speed once you've let the engines run a bit at straight and level flight. Probably not too dissimilar from the real thing I guess - the Avro Vulcan actually thought it was a Fighter, not a Bomber!
