Help me fix my strategy.

Easy cheese- Destroyed air support and poisoned water supply. Entered by Velum, looted coke from hangar to fill bag, grabbed guard uniform from dock, grabbed a truck and drove to pick up a grapple hook, drove to compound and jumped the wall, sneaked to vault, sneaked back out and over wall, laced Rubio’s chopper with sticky bombs.

 

was going to exit at main dock, arrived totally uncompromised, but a patrol boat with 2 guards on it sat parked in front of my escape boat and a third guard looked right at them. No option to take all 3 down quickly enough to escape unseen. Ended up killing them and taking off in the boat, blowing up Rubio’s chopper and boating away from the island until the mission ended.
 

should I have kept going to the airport and got back on the plane? Or is there a better way to escape?

Until this gets patched or Rockstar "extends the CP barrier" or whatever... this is usually one of the quickest ways off the island.

So you don’t have to keep swimming? My first two runs, I went around the other side of the compound with the bike, and since I had scuba gear i swam underwater for quite a long way before it triggered the end. 
 

looks like in this video, you (or whomever made the video) stops swimming at a specific point and just wait until the mission ends... rather than swimming until the game takes control away, like I’ve done before. What is the story there?

There's a little triangular tip on the map / radar that I always swim towards and basically at that point you've "escaped Cayo Perico". 
You only need to wait for the "Escape Cayo Perico" message to disappear off the screen and you don't need to swim any further.

You're leaving the active mission area. Currently the Heist is designed where once you go beyond the set "Heist Zone", you're done. Swimming near the sub, entering the plane, boating out far or simply swimming as shown in the video above is the way to leave the "Heist Zone".

You know that you've left the Heist Zone because the instructions to escape Cayo Perico vanishes. At that point there's no reason to keep swimming, you just have to wait a few seconds to register completely that you are in the clear. You could say part of it is R* laziness, but at the same time it made confirming actual escapes alot easier/less bug/less glitch potential that could ruin a successful escape.

Another way me and my friend used to do to escape the island is exit through the main gate, find jeep and throw ourselves into the water.

 

When we land in the water, we leave the vehicle and we just swim away in the sunset, nobody has seen anything and El Rubio's chopper cant get a sighting on us either.
