I have seen PC players are able to submerge their subs and swim underwater, down to the ocean floor. They also seem to be able to activate autopilot too with some of their keyboard commands. 

 

Is this available to do on console? I can't seem to see any options in the interaction menu, and anytime I push up on the analogue sticks, it doesn't do anything. Is it even possible on console?

Submerge is square iirc and autopilot is holding d pad left or right iirc. I've had a prompt coming up with this information when driving the sub but haven't done it since I discovered how easy the longfin prep is

You are spot on about the autopilot. Holding right on the D-Pad does the job. 

 

But square for me just changed the weapons. Holding it in doesn't do anything. Holding in X submerged it a little bit, but that's all. If I tilt up on the analogue stick, the back end just rises in the air and doesn't do anything. 

 

Edit. doesn't matter, mystery solved it is X haahaa. Just need to hold it in! My mistake.

Controls just like a regular sub, square to ascend x to dive, circle fires the torpedos

 

Its just really really big. Really big. You cant dive properly in Shallow water.

First thing I did was smash it into the rocks trying to dive because I didn't realise it was so big.

 

Rule of thumb, look at the minimap. Black water is deep water, the lighter the shading the shallower the water. Try and stick to black water.

Final thing... 
For a tighter turn radius, turn using your left stick at the same time as press L1 or R1 / LB or RB, depending on whether you're going left or right of course.

Also if you want to make a full 180 turn, do it in reverse as the actual point the model turns on is closer to the front. Reverse turns are fast and wide.
