Hah, I did this exact same thing not long after the game came out!

For the record, the total in "My Last Boy" is even higher if you count the Braves you run into while fighting through the oil fields. At first you have Dutch, Sadie, John, Charles, Bill and Javier riding with you to the fields. When you get there, Dutch, John, Bill and Javier split, then Arthur, Sadie and Charles ride down the hill with six Braves. Eventually you come across Eagle Flies and he joins you, and the part after this you encounter about five Braves, all of which die pretty quickly. When you find Paytah there's another Brave nearby but he dies, and then when you regroup with Dutch there are two Braves, and in my experience these are the only ones with a chance to survive. So that's a grand total of 22 companions helping Arthur at one point or another (Initial 6, 6 Braves on the hill, Eagle Flies, Paytah and 8 Braves on the oil field), with the maximum at one time being the part where you regroup with Dutch, with ten actively fighting.

I also have a document with a layout kinda like yours, where it's "Mission," then "Who appears in mission." Didn't post that one apparently, though I swear that I did. Oh well, no time like the present! This document includes the stranger missions as well. A few times I count things like Kieran in Old Friends as allies as well for some reason. I guess the logic was "If they die the mission fails, so it counts," or something like that. Apologies for any inconsistencies or mistakes, this was sort of a rough draft document I planned to clean up and post somewhere one day.

Fatherhood and Other Dreams II - Stealing a wagon and then possibly beating a guy up, after following Mary's father. Then you can go to the theater with her.
Dear Uncle Tacitus - Potential to kill four Pinkertons, otherwise just a ride to camp and then a ride to Lakay.
A Fork in the Road - Going to the doctor and then walking the streets.
Money Lending and Other Sins VI - Briefly shooting it out with the army, aided by J. John Weathers. Also going to a mine, then going to see Mrs. Londonderry.
The Course of True Love V - Shooting Braithwaites as they chase the train, then driving a train.
Do Not Seek Absolution I - Fist fight with a couple of men.
Do Not Seek Absolution II - Bringing Mrs. Downes back to town.
Of Men and Angels II - Donating food or money.

Epilogue
Big Posses or Big Shootouts - 2

Jim Milton Rides, Again? - Shooting out with the Laramies, aided by Tom Dickens and Abe.
American Venom - Shoot out with Micah's gang, at first aided by Sadie, then solo.
Small Groups - 5
Bare Knuckle Friendships - Briefly shooting up some men with Charles' help.
An Honest Day's Labors - Going after a bounty hunting group with Sadie.
The Toolbox - Fighting the Skinners with help from Charles.
A Quick Favor for an Old Friend - Fighting Cortez' men with Sadie.
Uncle's Bad Day - Fighting the Skinners with help from Charles.
Low or No Violence, or Solo - 14
The Wheel - Getting a job and driving a wagon. Stealing a wagon from some thugs too.
Simple Pleasures - Doing chores.
Farming, For Beginners - Doing chores.
Fatherhood, For Beginners - Doing chores.
Old Habits - Fist fight.
Fatherhood, For Idiots - Shooting three guys after driving a wagon, then more wagon driving.
Motherhood - Doing chores.
Gainful Employment - Going after a bounty with Sadie.
Home of the Gentry? - Shooting three guys at Beecher's Hope. Then riding with Uncle.
Home Improvement for Beginners - Pulling a house down with Charles and supervision from Uncle.
A New Jerusalem - Building a house with Charles and supervision from Uncle.
A Really Big Bastard - Shooting a bear and a couple of bounty hunters, going after a bounty with Sadie.
Trying Again - Going fishing with Jack and Rufus.
A New Future Imagined - Going to the theater, getting portrait taken, and rowing a boat, all with Abigail.

And finally, I had a mod idea I think you might find interesting. It's called "Red Dead Reimagined," and the basic idea behind it would be remaking the missions so that Arthur was an NPC and you played as one of the people accompanying him in missions. Unfortunately, I don't even own a gaming PC yet, let alone how to mod, so all this is right now is the document. Maybe one day, or maybe a talented modder will see this and get inspired. I posted part of the idea a long while back, but only now do I realize I never posted the complete thing. Also, I guess I intended to do something for the side missions too since it starts with "Story Missions," but I never have got around to that. Anyhow, here ya go. Apologies for the "journal" style of writing, these were just meant to be notes for myself that I'd get around to posting here in a neater way.

Spoiler

Story Missions
Chapter 1
Outlaws from the West

-Dutch or Micah. With Dutch you'd have to investigate the barn after hearing a noise. While waiting for that to happen you'd likely get a tutorial on eating. I reckon Micah could be a tutorial on horse care, since Dutch has him wait out with them while he and Arthur raid the house, and then when he goes in after them the tutorial would be on looting.
Enter, Pursued by a Memory
-Javier is the only one truly applicable for this. It would largely be the same thing. He doesn't do this in the mission but in this version he could shoot at the wolves along with Arthur.
The Aftermath of Genesis
-You could play as Charles but it would be kind of weird. It's supposed to be a tutorial for Arthur where he learns to use the bow, but if it were to be a mission here Charles would be the one hunting.
Old Friends
-Dutch, Micah and Bill are really the only ones, since they go into the camp. Lenny and Javier are just on lookout.
Who the Hell is Leviticus Cornwall?
-Lenny is the most likely candidate here, since he's the only one who gets to jump on the train with Arthur. While Arthur helps Bill with the dynamite I guess it could be a tutorial on using the binoculars? Everyone else could be a candidate too I suppose, but after the cutscene they'd have to go riding after the train, and then help take out what's left of the guards.
Eastward Bound
-This one would be so boring. As Dutch you'd lead the caravan. As anyone else you'd follow the caravan or ride on the wagon in complete silence.
Chapter 2
Polite Society, Valentine Style

-Another that would consist of just riding in the wagon. Maybe shopping as Uncle. Doubt there'd be much clamor for this one to be "adapted," so to speak.
Americans at Rest
-Fighting in the bar and then watching Arthur fight. Might be too boring to bother with.
Who is Not Without Sin
-Play poker as the reverend, then wander around into trouble and have to get his foot out. Again, might be too boring to bother with.
The First Shall Be Last
-Javier or Charles. As Javier it would be virtually identical. The difference with Charles would be going around the camp at another angle.
Paying a Social Call
-John or Bill are the ones you can play as. Would pretty much play as the normal mission does, just from another perspective.
Money Lending and Other Sins I
Money Lending and Other Sins II
Money Lending and Other Sins III

A Quiet Time
-Suppose you could theoretically make this a mission where Lenny follows Arthur and experiences the stuff from his own perspective? Not entirely sure what that would consist of though.
Exit Pursued by a Bruised Ego
-You could do this one but it would just be Hosea leading Arthur around and watching him hunt. Though, since it's a new perspective thing, you could show him being the one to hunt a rabbit and shoot the bear at the end.
Blessed are the Meek?
-Micah. Largely the same mission.
We Loved Once and True I
We Loved Once and True II

We Loved Once and True III

-Jamie, if anyone. Not sure if this would be really interesting enough or not, but the mission could be trying to outrun Arthur as him.
Good, Honest, Snake Oil
The Spines of America
-This mission would just be following Arthur and trying to distract those two dudes, unless you had Arthur botch the robbery in which case a shooting would occur. Only way I can see making this interesting or worthwhile to do as Hosea.
Pouring Forth Oil I
Pouring Forth Oil II
-This is literally just the same mission but with John instead of Arthur.
Pouring Forth Oil III
An American Pastoral Scene
-Micah. Another mission that's largely the same.
A Fisher of Men
-The only one you could play as for this is Jack. First part of the mission would be riding on Arthur's horse, then you'd fish, and then to make Abigail's necklace maybe it would be a tutorial on picking plants.
Pouring Forth Oil IV
-John, Charles or Sean. First part of the mission would just be a long wagon ride. Not sure what Charles and Sean would do during the train robbery part, but during the shooting segment they'd be shooting obviously, and then they'd flee at the end.
The Sheep and the Goats
-John, maybe Dutch. Again, you'd have to make some things different, namely that John or Dutch is shooting as well as pushing, though I guess you could make the pushing thing a button mashing portion. Final objective would be to escape the law, like it is for Arthur.
A Strange Kindness
-Charles. Mostly the same mission, except the last objective would be going back to camp and then it would fade to black and the final cutscene would commence.
Chapter 3
The New South
-Dutch, Hosea or Archibald, but it would be a very boring mission. Leading Arthur as Dutch, following Dutch as Hosea, riding after the train as Archibald and then leading Arthur around. Then the last part as Dutch or Hosea would be fishing as usual and enjoying a boat ride back to camp.
Further Questions of Female Suffrage
-Sadie. Lot of wagon riding but instead of sending mail you'd buy stuff and also buy the new outfit.
Money Lending and Other Sins IV
American Distillation
-Dutch, Bill or Archibald. Dutch would be best since you'd still do the race in the end, though Bill would do the shooting part with Arthur. Archibald would just be driving the wagon and then riding in it (or vice versa, can't remember).
The Course of True Love I
The Course of True Love II
The Course of True Love III
Advertising, the New American Art I

Advertising, the New American Art II
-Hosea. The initial part would see you riding in the wagon, then the drink pouring part would be skipped, and you'd shoot up the place with Arthur, then you'd be riding the wagon trying to outrun the Lemoyne Raiders.
Horse Flesh for Dinner
-Javier or John. Largely the same except you wouldn't have to go back to wrangle the lost horse, just ride straight to the fence.
The Fine Joys of Tobacco
-Sean. You'd ride in the wagon in the first part, then instead of dousing the fields you'd sneak to the barn and douse it. Like in the normal mission, you'd eventually start shooting. Then you'd find the payroll while Arthur frees the horses and flee.
Magicians for Sport
-Charles would be the player character, and it would largely be the same. You'd save Arthur from one of the guys and then help him kill the guys in the barn.
Friends in Very Low Places
-Not sure how fun this one could be. The only applicable one is Trelawny and he doesn't do much.
An Honest Mistake
-Bill, Charles and Uncle. More or less the same mission. Probably the only one where you can play as Uncle.
Preaching Forgiveness as He Went
-Lenny, and again it's largely the same mission, except leading Arthur in the beginning and riding the wagon at the end.
Sodom? Back to Gomorrah
-Bill, Lenny and Karen. Whoever you play as would be the one that talks to Arthur on the way to the bank, and while at the bank you'd do crowd control. Shooting and escape would of course be the same.
Blessed are the Peacemakers
-Another boring one. All you'd do in this one as Dutch or Micah is ride to the meeting, then ride away after the meeting in silence. Dunno what would happen and how it could be illustrated when they find Arthur missing. Maybe have them say his name and then ride back to camp, dunno.
A Short Walk in a Pretty Town
-Micah would be optimal. You could do Bill but I don't know what he'd do after Micah and Arthur go to the gun store.
Blood Feuds, Ancient and Modern
-Anyone, though dunno what they'd do during certain times. Like the group who doesn't go in, I don't know what they'd do until the reinforcements show up, maybe loot the dead? And Dutch and Hosea bang on a door for the rest of the mission after the halfway point, though I guess you could retcon it so that whoever you play as goes out on the balcony and shoots down at the people.
The Battle of Shady Belle
-John. You'd follow Arthur, then clear out the place with him and search the rooms. Then you'd ride back to camp to commence the final cutscene. I guess Dutch would be an option? But that would just be you leading Arthur to Saint Denis.
Chapter 4
The Joys of Civilization
-Nothing to do as anyone. Unless you wanna play as Cleet the kid and outrun Arthur.
Angelo Bronte, A Man of Honor
-John. It would largely play out the same way I imagine. Dutch probably isn't an option, as all you'd do is lead John and Arthur to Bronte's, then to camp.
Money Lending and Other Sins V
Help a Brother Out
Brothers and Sisters, One and All
Fatherhood and Other Dreams I

Fatherhood and Other Dreams II
-Literally the only one you could play as is Mary, and it would be the same except for you'd never follow the guy with the jewel. Boring and not worth it I'd say.
No, No and Thrice No
-Mrs. Grimshaw is the only option, and the most interesting part would be riding on the back of Arthur's horse and killing the gang members. Could retcon it so she goes in with Arthur to kill the guys inside.
The Gilded Cage
-Nothing to do really, except mingle at the party and watch fireworks.
A Fine Night of Debauchery
-Javier is the only one I could see being an option, but I guess you could retcon Strauss and Trelawny having guns. That'd be silly though. As them the objective would just be avoid getting shot, and as Strauss all you'd do is nod or shake your head, haha.
Horsemen, Apocalypses
-Dutch, Charles and John with the mission largely playing out as it normally does. Sadie is an option to but I'm not sure what would be done to explain her absence in the beginning of the mission.
Urban Pleasures
-Lenny is the most likely one, since he's always an active gun and drives the wagon at the end. I'd say Dutch but he's sort of out of commission halfway through, though if he were the player character a neat detail would be messing with the interface, like making it look like it does when you're low on health.
Country Pursuits
-Dutch, and the mission would largely be the same except instead of looking for Jules at one point, he'd be following Thomas around until Arthur is heard.
Revenge is a Dish Best Eaten
-Bill, Lenny, Dutch and John. Largely the same, except as anyone but John you wouldn't have to find Bronte. Maybe search the other rooms instead?
American Fathers I
American Fathers II
-Hard to say if this is a real option. Suppose the mission could be a sneaking one for Eagle Flies as well, with him eventually blowing the oil up and then fighting the guards until Arthur arrives.
Banking, the Old American Art
-I'd say you can play as any active guns, except for Lenny and John unless you want the mission to end like its been failed but then cut to black and then start the next mission. Hosea would be cool but again, the mission would end after his death cutscene and we don't really know what he's doing when he leaves the group. With Charles the final objective would be to escape the law and get back to camp.
Chapter 5
Welcome to the New World
-Hercule is the optimal candidate. I could see playing as any of the guys in the chain gang too though, except maybe Javier unless you want a mission of just walking and then getting caught.
Savagery Unleashed
-No real candidates for this one, unless you wanna make Leon a gunman along Arthur in the end.
A Kind and Benevolent Despot
-Dutch, and the mission would largely play out the same way except escaping to camp with Javier in the end.
Hell Hath No Fury
-Again, Hercule may be the best option since he's always accompanying Arthur if you want more or less the same mission. Dutch would be fending off the ones coming on the beach after Hercule and Arthur go back to the castle, and Bill and Micah would more or less be shooting at people from the roof the whole time. During this last bit instead of shooting the warship, Hercule would be shooting down at people instead of firing the canon but would help reload when necessary.
Paradise Mercifully Departed
-The only candidates would be Dutch, Micah and Hercule. I think Hercule is the one where it would largely play as the same, except maybe keeping people off of Arthur's back while he tries to kill Fussar.
Dear Uncle Tacitus
Fleeting Joy
-Sadie is the best choice here since she's the only one who consistently fights. As Bill, Dutch and Micah you could shoot at them from the house until Arthur kills the gunner, then come out and join in the fray. Guess theoretically you could retcon and make Charles and Javier do the same.
That's Murfree Country
-Pretty much the same mission, except it's Charles, and at the end you go get everyone at Lakay instead of taking the girl to her home.
Chapter 6
A Fork in the Road
Icarus and Friends

-Sadie is the only option, but not sure what the objective would be once Arthur's in the air. "Find some O'Driscolls to piss off," I guess.
Visiting Hours
-Sadie. Mission is mostly the same I'd guess. John is an option too but it would only start after he's let out of course. A fun thought is John starting this mission by walking to a guard calling his name but I don't know if that's anywhere to be found in the files.
Just a Social Call
-Dutch and Micah. As Dutch it's the exact same mission, with Micah the new objective would be following Cornwall's guy and then knocking him out to get the plans.
Do Not Seek Absolution I
Do Not Seek Absolution II
Of Men and Angels I
Of Men and Angels II
The Course of True Love IV

The Course of True Love V

-The only option I can imagine is make Beau not be a pussy and have him help Arthur fight his cousins, and help in shooting when the Braithwaites come for the train.
Money Lending and Other Sins VI
-Probably the only usery mission that has an ally that can help out, which is Weathers when the army comes looking for him.
Money Lending and Other Sins VII
The Delights of Van Horn
-Bill. Mission would mostly play out the same but without a sniping segment, and Bill would drive the wagon back while fighting the enemies.
The Bridge to Nowhere
-Same mission but as John, except he'd only have to place on dynamite thing, and the last objective would be "Wait for Arthur to blow the bridge."
A Rage Unleashed
-Eagle Flies, Dutch and Charles, but the mission would basically be the same either way.
Archeology for Beginners
Honor, Amongst Thieves

The Fine Art of Conversation
-Charles, with the mission being virtually identical.
Goodbye, Dear Friend
-As Dutch and Sadie you'd have to shoot your way out.
Mrs. Sadie Adler, Widow I
Mrs. Sadie Adler, Widow II
-This is another one that's largely the same. The only difference would be while Arthur goes to barn, Sadie would go and clear out the house and then engage in a physical fight with Tom, the fat guy.
Favored Sons
-Dutch is the most likely candidate, and the mission would play out the same way mostly. Eagle Flies is another option, but I don't know how you'd illustrate him getting arrested. Might just be better to end the mission after the cutscene where we see him last.
The King's Son
-Charles is the only real option. The mission would mostly be the same. I guess making Eagle Flies playable would be an option if you wanna retcon him having a gun and fighting alongside them instead of being wounded.
My Last Boy
-Anyone probably. As Charles or Sadie the mission would mostly go the same, especially with Charles since he goes to the reservation with Arthur. With Dutch he'd lead the others to attack the oil fields from another place, and of course with John, Bill and Javier that would be the same for them. Dutch would of course go into the office with Arthur and flee it as well. For Dutch, John, Bill, Javier and Sadie the end of the mission might be riding back to camp. For a unique perspective, the mission could be Eagle Flies leading his band to the oil fields and we get to see the initial attack. In this way I guess Paytah is a viable option, for both this and the ride back to the reservation.
Our Best Selves
-The only real options are John, Sadie and Cleet. Everyone else would just be riding a horse to follow the train, and with John the mission would end right after his "death."
Red Dead Redemption
-The only real viable options are Sadie and Micah. Sadie would be playable up to the end of the Van Horn section, and she might get an objective to take Abigail to safety, while Micah would be playable from when Arthur shows up to the camp. I guess John would be an option too, and maybe you could even start the mission with him having to escape the army after being left for dead and end it with him having to lose his wanted level and get to Abigail. More likely than not, the final objectives for Bill, Javier, Cleet and Joe would be to lose the wanted level so I don't see them being playable as too viable. While chasing after John and Arthur, Dutch and Micah's objective would probably be to fight through the Pinkertons, and at some point during the fight Micah would have to sneak off to pursue Arthur; same for Dutch after a bit. Dutch would have to find Arthur and Micah fighting, while Micah's last objective would be to fight Arthur.
Epilogue: Part 1
The Wheel

-No one to play as.
Simple Pleasures
-No one to play as, unless you wanna be Jack manning the wheel barrow.
Farming, for Beginners
-No one to play as.
Fatherhood, for Beginners
-No one to play as, unless you wanna be Jack in the horse race.
Old Habits
-No one to play as.
Jim Milton Rides, Again?
-Could play as Abe or Tom I guess. Not sure why you'd want to.
Fatherhood, for Idiots
-Could be Jack while he drives the wagon I guess. Pretty boring.
Motherhood
-Once again, no real candidates.
The Landowning Classes
Home of the Gentry?
-Only candidate here is Uncle, and all he'd be doing is following John to Beecher's Hope.
Epilogue: Part 2
Gainful Employment

-Sadie, and it would largely be the same mission except you'd have to wait for John to lasso the guy, though you could retcon it so she's the one to do so.
Bare Knuckle Friendships
-Charles is the candidate. It'd start with the fight, and Charles would be the driver as they escape the town.
An Honest Day's Labors
-Sadie. Mission would largely be the same.
Home Improvement for Beginners
-All you do in this mission is pull down the house. You could play as Charles but since you're extremely limited in what you can do I don't think this one would be worth the effort.
The Tool Box
-Charles. Mission is pretty much the same.
A New Jerusalem
A Quick Favor for an Old Friend
-Sadie. Mission is more or less the same I think.
Uncle's Bad Day
-Charles. Mission is the same.
The Best of Women
Trying Again
-Could just go fishing as Jack and then look for Rufus.
A Really Big Bastard
-Sadie. Probably about the same.
A New Future Imagined
-Abigail is the only option, and it would mostly be enjoying being escorted by John.
American Venom
-Charles doesn't really do anything this mission so I don't think it's him, unless you want him to sneak up the mountain wounded. Same with Sadie after the halfway point. Guess you could do Dutch if you wanna do a really brief mission where you shoot Micah and then watch John finish him. Truth be told, this is a mission best left with one perspective.

Waow nice analysis. Good work.

While creating this topic, only think matter was numbers for me. So that why i made leaderboard too. About My Last Boy mission;

(15) + (Allies) My Last Boy: Arthur, Dutch, Sadie, Charles, John, Bill, Javier, Eagle Flies, Paytah, 6 Native + Allies”

I only count 6 native as companion for this mission. Because of that scene Arthur,Sadie, Charles and 6 natives riding horse together.

I wish there was more missions with more than 5 companion or free roam companion system in the game. But its still fun to use companion glitch
