Chance Encounter: Cougar Spawn

Does anyone know if chance encounters in RDR2 respawn if missed?

 

I was riding past the brush fire location down towards the Dakota river where I heard the cougar faintly growling in the distance. As I headed towards the noise the snakebite encounter triggered which led me to save the man by removing the venom from his leg. Once I continued on towards the cougar spawn location there was a male's dead body beneath the tree, which he is usually found dangling from. Due to me not actually being close enough to hear the man calling for help or have it appear on the mini map, will this respawn in a few days? I'd hate to miss out as it's a great way to obtain a 3 star cougar pelt early on.

I know it's a bit late. There's another area on up the river on the other side, where the road takes you to the Appleseed timber company, where that event can happen on top of the cliff.
