I must be horrible at this game (Bounties running)

Need some tips. My Bounties (about 25% of the time) are running off while I am fighting the rest of the mobs around them...and even though I still have a ton of time left on the clock, they always seem to "Get away" long before the timer runs out. I can't risk hog tying them up while I am being shot at because NPCs seem to be good at getting that easy head shot in on me while I am doing it. Any suggestions?

 

Edit: I shoot all horses, these guys are escaping on foot within a minute or two of the fight starting. Not sure how to deal with this situation other than to just start killing them and not trying to bring them in alive.

First and foremost, level up your bounty hunter role until you unlock the bolas. It's a very useful tool. 

Second try to go with a friend. One goes after the bounty, the other gives cover. 

BTW at first I killed em all myself until I learned. So it's normal if you've just started.

Great tip, thank you. So basically I'm trying to walk before I have learned to crawl.

You can also just go after the bounty once they begin running. Stay behind them but nearby until you get good distance from the gang. Then grab him/her.
