Antler knife encounter

So I read up that the antler knife can be found when encountering a hunter being attacked by a bear.

 

I know I've already ran into this encounter but didn't know about the knife yet, so I killed the bear and just walked on off. is there a way to replay this? Or find the knife anywhere else? Or am I screwed?

As I recall both should already be dead when you come upon them. It is in a set location northwest of hanging dog ranch. It is not a random encounter
