You can check it on your stats, under the 'Player' section.

 

However, I did notice there is a Gambling stat as well, so now I have no idea what each of them does. Might test them a bit later.

 

E: Alright, so here is my theory:

 

The Gambling stat affects Casino games, like poker and blackjack. The Luck stat affects horse betting.

 

Here is me on my 100% save (1000 luck) winning a bet on a horse with a 11/1 chance of winning, on my first try:

 

Here is me on another save (0 luck) losing on a horse with a 2/1 chance (also first attempt):

 

My Gambling stat is on 0 on both saves.

Thanks man. I thought it was one of those stats with a bar like muscle,fat etc so when I didn't see it among those I thought you had to find it some other way lol.

If your hypothesis regarding luck affecting horse betting is correct then that stat is really important as it can get you millions in no time . Cool find

 

OT: This'll sound lame after the excellent find above, but in the mission Home Invasion if you stay in the Colonels house till the timer runs out, the Colonel has unique dialogue where he says something like 'Morning already? Wait a minute, something don't feel right here!'.

The Luck statistic does nothing. It's never even referenced in the scripts.

If I had to guess, the "luck" statistic did originally have a purpose but didn't make it very far past a development stage. This is purely speculative by the way - I'm not basing this on any information I've parsed from the files. I just find it curious that a stat would exist and have collectables linked to it without any benefit. Every single other has at least a game change but there's no evidence that gathering horseshoes does anything other than contribute towards 100% completion.
