What's worth to do, apart from storyline?

I'm in 3rd chapter right now and I'm wondering what's worth to do in side activities. I don't want to hurry and finish the story too quick. What do you like to do and can recommend to check out?

Just do what ever you fell like doing. There are many activities in the game. The point is just to have fun.

Ok, thanks. But maybe I should tell, what I've tried: hunting legendary animals, few strangers missions, maxed out camp, found one treasure in Saint Denis (is it worth to collect all? Reward for this one was only 30 dollars), stole some wagons for Seamus.

What else can you recommend to do?

I personally use an external map like this one for example: https://rdr2map.com/

It keeps me extremely busy since there is so much to do everywhere near you.

I recommend that you deeply explore the regions were the story has led you and not further. For example you say you are in chapter three so you have the entire Scarlett Meadows region for you there. Look for cigarrate cards, dino bones, dreamcatchers. Add to your compendiun local wildlife and plants, this region also offers some intersting points of interest and random encounters...

From the beginning I was mostly interested in free roam. Opening up all corners of the map.

Breaking the white Arabian finding the treasures and having a powerful long range rifle for hunting were prerequisites.

Learn about plants and their qualities. When you can afford it, by pamphlets at a fence to learn how to craft tonics. To learn the recipe you have to open and read the document.

It's good to know where the different herbs grow when you start the Herbalist challenges.

I tried out virtually every optional activity. For me, the ones I gravitated to most were poker and hunting. Poker is the only card game I enjoy. And I really enjoy it. I've tried virtually every computer poker game over the years, but to my astonishment, it was in RDR 2 that I found the very best! Love the poker in this game.

I'm an avid fisherman in real life, but I didn't take to RDR's version. However, the hunting I really liked and rarely returned to camp without some game hanging from the horse.

Other stuff like card collecting, dino bones and rock carvings I basically ignored.

One of the things I spent time doing when I needed something to do was to head out on the horse to free captives. You know the 'official business sir, keep your distance' sort of stuff, or prisoners in coaches. Outlaws gotta stick together you see.

All the recipe pamphlets are findable or earnable too :)
But if you have nowhere to spend your 19th century dollars it sure is good fun.

I especially endorse ShieldMaidens advice for plant finding.
The reason is that it is surprisingly tranquill. Your horse and you in good health, beautiful scenery, finding plants, learning recipes...
You'll feel more enganged with and part of the playing world. The way Arthurs journal fills up with it is also a treat.

Since you're in chap 3 already, I do recommend playing poker at flat neck station and black jack in the saloon of Rhodes.
Time will fly! You'll hear NPC talking while you play that gives many little quirks and easter eggs of the things that happen in the playing world.

Studying animals with the binoculars is fun too, because each time you think "I can't possibly find more animals (races) in this area", you'll
still find more, and then some. Hoarding all the different kind of feathers in your inventory is kind of cozy. There is a lot!

You can already meat Mr. Gilles, the master fisher for great distraction. Although I do like slow paced, mundane, dad-game like distractions
I'll admit fishing can be seriously boring if you're not the type of person for it.

If it is action you want: find gang hideouts. Good rewards for F'ing them up.
Unfortunately they do respawn.

Or, get your shotgun ready and do some abandoned shack hunting. Lovely atmosphere and great substories.
You'll find some treasures too.

Then theres photomode, or the screenshot button on your controller.
You can break horses and find a great one in the wild. Hosea was right when he said the best ones are sold in stables.
But great ones can still be found in the wild, especially in chap 1, 2, 3 and 4. Also, wild horses have some beauties not for sale.
The Hungarian half-bred is a gem if you get a brown one and paint it's mane and tail black.

You could bring a boat load of 3 star hides to the trapper for some unique gear.

Playing mini games with camp members unlocks a lot of contextual story info

Consider all the tings written above and just doing half will already rob you from hours on hours.
And you'll appreciate the rest of the game more as the playing world gets more clear and holistic.
