The day cycle is so fast that it's extremely jarring. I saw someone released a script hook, don't know if it's good enough for this, maybe it's also doable via cheat engine? It has an option to change the timecycle and it does work to a degree though there are some issues. Sleeping doesn't progress time in the game, and I've also heard that the time in some missions will change the time of day and it can be jarring but I haven't seen this myself. Hopefully they'll have a proper working time system soon because this is the number one thing I want as well. I still can't really believe Rockstar thought it was fine how it is. Have a look for NexusMods there's a mod there called Longer Days and it works with script hook. I've just tried it out and it seems to work perfectly (sleeping advances the time now).
