Can only speak for PS, but that's when the store updates (sales). As far as updates, GTAO gets updated on Thursdays.

Tuesday is the traditional release day for games in the US, so a lot of updates release then too, I imagine it's also why the PS store updates on Tuesdays.

 

Worldwide Friday releases (the traditional EU release day) are becoming more common for games but patches/updates will usually always release early in the week so they're not having to hotfix potential issues over the weekend.

Because it's the perfect day for work, I'm not sure about the economic reasons.

They can't do it on Mondays because it's the first day of work, they treat it as the day to prepare everything before a big launch.

Now say you released a big update, there's like 99% chance the community will experience some bugs, so you need to fix them as soon as possible.

Would you rather have one day or two days to work on fixing those issues before the weekend or 3 days ? You would go with the latter which is why Tuesdays are perfect for big releases.

Tuesday is also a good day for press releases generally, when I worked in P.R

Not the mad rush of Monday where it's catch up for 3 days or the 'no one cares' of Friday

Not just games. Same goes for music, movies etc. I guess it was done to give every store the same chances. In the UK, release day is usually Monday, and for mainland Europe it's usually Friday.
