Most know this but just in case OP doesn't - setting your horse close or on top of your kill greatly speeds up the time it takes to skin and stow.

While hunting is a good source of money, your best bet is starting a stranger mission (one that does not require being in offensive), do the objective but stop short of turning it in. Use whatever time you have left to do some hunting, then head back and turn in the mission once you got between a minute to a minute and thirty seconds left on the clock. Once you get back to the objective wait till about the last 10 seconds to turn it in for maximum profit. I don't really do the story missions because of the the high probability missions will fail due to stupid teammates, wasting your time. With this you're more in control. Hopefully one day Rockstar will let you do story missions solo, until that day I am sticking primarily to a combination of stranger missions and hunting.

 

My best haul was yesterday during a destroying supplies mission. I caught two pristine whitetail bucks while the timer was counting down as well as a few pelts and other things on the side. Completed the mission for about thirty dollars and got another 25+ from what I caught hunting for a total well over fifty dollars. It was nerve racking though when I rode into Rhodes with the two whitetail bucks, I was on high alert cause someone was bound to at least attempt to steal the one I was dragging via my lasso if they got the chance. Thankfully no one was there at the time.

I did the mission for the incest couple. Stole a horse near Gaptooth station, raced back and just over the finish line, bang, disconnection. Of course nothing registered. With the freebee period on ps4, log on without psn+, the servers were overloaded. 

 

Sadie Adler and Flaco missions are OK if you spawn in Lemoyne and travel all the way up north. Then nobody is there. 

 

Otherwise, I stick to hunting and fishing. I only bother with stuff that I can put in my satchel.

I've made around 600 bucks by hunting only tonight. Shoot everything that moves, skin it and sell everything when full. The daily to get 2 bullfrogs alone got me loads of money, as I came across a lot more other animals than bullfrogs. 

I also pluck herbs along the way and sell those to the doctors. Peanuts, though, but it's an extra few bucks.

I hunt and play showdowns, especially when they have extra cash/xp on them. 

I don’t have like tens of thousands like some folk do but I own everything I want in the game and have tier 3 ability cards.
