Let’s say mocap is the issue. They started working from home mid March, let’s say once that happened they realized they wouldn’t be able to complete that update. I think they might’ve put it to the side (until it can be completed) and started working on a brand new update that doesn’t need mocap and can be completed during the quarantine. Usually R* update development cycle is an average of 3-4 months so if they stopped mid March and let’s say started on this update early April we should get an update mid July to early august. That’s obviously if that was the case but clearly no one knows what’s really happening behind the scenes at R*, I still think they are combining two updates into one big update.

It could be that they always planned a May/June release with 2 role expansions but it got pushed back 1 or 2 months because of the lockdown to late July.

 

Could be as simple as that.

 

And they will announce it a few weeks before so maybe in the next 3 weeks.

If you look at the generic cabin used as options for the Moonshine Shack, I think there's a generic Barn that's used in several places.  This could be a possible property location for use that won't overlap the Moonshine Shack while still retaining a shared layout.

I'm scratching my head though because I haven't gone around to count how many of these Barns I believe are re-used.  Not as many as the Moonshine Shack.

Often it will be the specialty of the photographer, depicting animal people, etc.
