According to the gta.fandom.com, If the player chooses the "Deal" ending and Niko has not been dating Kate before the mission, it creates a glitch where if Niko calls her, she'll never answer and a dial tone will play when she calls and says she has heard about Roman's death and says she will be there for Niko. If the "Revenge" ending is chosen, she may still contact the player to go on dates due to a glitch. She shows up as an unknown caller and cannot be called back. However, Rockstar hasn't given any official response to it. It may have been intentional, or it may be a glitch, but Rockstar hasn't confirmed either. In answer to your final question, Kate will still attend the wedding with Niko even if you haven't dated her. She will say something along the lines of it being strange that she is going to a wedding with a guy she hardly knows. You are correct that there are glitches regarding Kate on the endings. She has been known to call after the Revenge ending as an Unknown Caller. Never experienced it myself though. I have experienced the Deal ending glitch though. I don't actually know what causes that though because I can confirm that it's not to do with not dating Kate. I dated her plenty on a recent playthrough, got the call after the Deal ending saying she would be there for me only for her to never call nor answer her phone. My suspicion on this is that it had something to do with me filling up Niko's inbox prior to the ending (this plays a part in Kate's Deal ending) as it also stopped me from being able to befriend Dwayne. I can't confirm if that is the issue though because I have always suffered this Kate glitch when I choose the Deal ending and I don't know if my inbox was full on previous playthroughs. It is just a suspicion as I say. Hope that is somewhat helpful but I am sure that someone more enlightened than me will be able to give you more detailed answers.
