Is there a way to steal a train without having the law called on you.

So I have been trying to steal a train and just drive it around the map but it always ends up with a barrage of sheriffs sorrounding the train and shooting me down. The first time I tried I jumped on to a cargo train and pulled the driver out into a bridge and somehow the cops got called on me. The second time I jumped on and there was a guard in one of the train and I diffused the situation and stealth killed him but somehow other guards a appeared a killed me in a shootout. And to make it worse if you manage to get to the engineers cab before he says anything you can’t stealth kill him or knife him or something. You always have to shoot him which attracts the attention of the guards or press y with throws him off the train and he goes to get the cops on you. Very frustrating because I just want to drive a train without 10 cops shooting at you or jumping on to the train.

If you get lucky you can get a train robbery random event where one of the gangs is holding up a train. It's completely up for grabs after you've dealt with them, hassle free.

 

I've gotten this event a few times and stole the train every single time afterwards
