How do you acquire "Gritty Fish meat"

I've bought the strategy guide and tried to look everywhere i can on the internet but i cant work out how you acquire Gritty fish meat which is required to craft Potent Predator Bait

 

Any help would be much appreciated!

Catch small fishes. I catched fishes giving gritty fish meat with bread and cheese bait nearly everywhere - rivers and lakes.

As far as I seen only fish that gives the gritty fish meat is the bluegill after you catch go into satchel and go to materials select the bluegill and select break down then it will break it down into the fish meat
