Invintory/satchel management tips

I've been playing a few hours now and my satchel is nearly full. How do I add things to my horse inventory? 

 

Whenever I access it all I get are discard options. I cant see anyway to move things to my horse or vice versa. 

 

I have 5 pelts on the back and I cant take them off. I can only discard them. Kinda defeats the point of nearly being killed by a cougar if I cant sell its pelt.
