It's an older Infernus that's why it's called that

but in real life, they don't keep making lamborghini diablos

 

and they don't call the old ones 'diablo classics'

R* does. That's why the Infernus has canonically been around since 1984. Where it was a Countach. In 1986, still a Countach. In 1992, an NSX for some reason. In 1998, a Vector/Diablo. In 2001, a Vector/Diablo. In 2008, a Murcielago/Zonda, and in 2013 a Murcielago/Zonda.

Of course, there was the switch from 3D to HD era, so what the car was in one universe isn't necessarily what it'd be in the next. But the Infernus (with 1 exception) has always been intended to be a parody of whatever the top dog Lamborghini is available during the year the game is set. The only time that hasn't been the case is San Andreas where it was an NSX, and 5 where it's still a Murcielago even though by 2013 the Aventador had been out for a while.

It stands to reason that would remain the case regardless of the year, as well. The biggest issue would be the 60s-70s where the Monroe we already have would be the supposed top dog Lamborghini. So perhaps the Infernus name would be used on the 400GT/Espada/Jarama of the era.

I'm really hoping the Turismo Classic will have pop-up headlamps.

I doubt about Turismo, but Infernus will have animated headlights. You can see in Foxy's mods video that the covers are at the wrong angle and the coronas are underneath the hood.
