How do you change your car for these missions? I see one guy had a different car each time we played a mission in a row.

 

Also how do you earn more money, usually on hard you get maybe 18,000 but occasionally we got 25000, did we kill more coppers?

The pay out grows with each 2 minutes passed. The one that paid more must've just took a touch longer is all. Up to 15/16 minutes, that's the limit for maximum pay there.

 

The player with a different car each time was probably calling the mechanic on the previous job after the most is done, at a guess. (Stealing an NPC cat to move away from theirs).
