It has already had the M rating. Look at the bottom left in the video. 

 

The gore and violence is uncensored. You can watch Arthur skinning an animal harshly, and there is a limb dismemberment mechanic in the game.

I think him dying at the end would fit and link both the games thematically

Anyone got an idea what happens if the black special edition horse or the war horse dies? Would be weird if it was just a one time thing and you couldn't respawn them.

 

Ive been thinking that maybe if those "special" horses die they respawn at your main camp and not right next to you. Id actually like that because it doesn't ruin immersion completely.

I don't think R* will let another main character die (in the RDR franchise). That woud be kinda lame and they're not like that. They'll come up with something different, but as overwhelming as in RDR 1.
