NPC Modified vehicles. If they were more common in GTA Online, it'd make a huge profit for selling them. That's just me.

They seem to have fallen from grace in favor of the T20, Zentorno, Osiris and Turismo.

Sadly I have to agree. We have to move with the times. BTW you didn't mention the armored kurma as another one in favor of others.

I still have my Entity and I use it all the time. I traded it in for an Osiris once, regretted it and switched back. The Entity may not be the fastest super car but I can drive it well enough that I can still beat T20's and Zentornos regularly. Only time I have trouble is when I run into a T20 or Zent driver who is also skilled.
