Contact missions that are amazingly fun but pay like crap (its scripted to be like this) or Contact missions that can rivals The PS Heist in terms of payout BUT its boring and dull to the point of dying from boredom?

I guess first option,I didn´t mind grinding missions even back when they payed very little.

 

DLC that adds some new NPCs in both Online and singleplayer or DLC that adds animals in Online?

For instance, a bike can transform from a chopper to a sports bike, etc.

Uhm, no, VTOL helicopters wouldn't be so useful IMO.
