Remember that Niko fought in the military, while Trevor was in the air force and nothing else. Also, having rage doesn't last forever, it runs out sooner or later. Niko seems to be a grounded guy who can pack a punch when necessary. Trevor is a heightened dude and while his violence on a weak and drained Johnny was badass, I don't think he'd win against the likes of Niko.
