This has probably been answered buy but why is there no animals in free roam? Does Rockstar realise the potential fun in hunting animals with other people and taking photos of roadkill with your pals?

Because to have animals in online would mean that their positions would have to be transferred across the network work alongside everything else,and R* decided that it would require to much data, it's the same with other dynamic objects like post boxes etc.

Yeah, I don't think GTA:Online could handle it, as it can barely handle the 30+ players as is.

There will be console limitations I reckon.

 

It would be nice to have a hunting option though. Even if the wildlife was just limited to that - enter a hunting activity and go hunt deer.

 

There is animals online though. There is plenty fish in the sea, I've seen butterflies and my friends are convinced they have seen birds (although I reckon it is simply bits of dust or something floating about). But fish are still wildlife so that will do for me.

In the city we have pedestrians, quite a few of them. The countryside perhaps has a handful of hikers along the paths. I don't see the big deal with a few deer or mountain lions when in the woodland or wilderness were there are no vehicles or pedestrians per se. Given the game loads in cells it's not as though the server communicates the position of a pedestrian in paletto bay to the other 29 players in Los Santos and the hundreds of possible pedestrians they have spawned.

 

My guess is there will be a hunting DLC sometime in the eternity known as rockstar land.

Console limitations, lol. Well, even ten year old last gen consoles are able to handle quite a lot.
It's the combination of bad coding, an awful technical infrastructure for online and lazyness.
Animals are just normal NPCs, there is nothing special about it. Even online was able to handle them just normal when they were modded into custom captures.
The game can do a lot, it's depending on how clients communicate with each other and yeah, that's the point where everything is messed up.
