First option seems more realistic (I doubt an undercover cop is allowed to kill people like a typical GTA protagonist frequently does).

I'd welcome it. We've seen unhinged characters, but I'd like somebody more relatable and realistic.

I would choose slow progression why? More story, missions and side quest, which is more fun, i think...

 

Gta weapons like katana chainsaw with gore style dismemberment etc violence like VC and improved (npc can still walk for a while even after getting stabbed or dismembered) or cartoonish violence like GTAV (no facial damage, dismemberment etc etc)

First Option , gore system from RDR2 is pretty much like that already just not as detailed like your describing which I want. 
 

 Core Stystem like RDR 2 which just fatigue and fat gain or loss or Stat System like GTA SA which show muscle gain, and more prominent physique characteristics.

You can guaran-dam-tee that the weight gain mechanic in RDR 2 was a market test for the next GTA.

Declasse Tulip SS, I would've liked a 2-door version.
