Tried identifying them:
Font 0 is Chalet - London 1960
Font 1 is Sign Painter - House Script
Font 2 no idea, some sort of slab serif type
Font 4-6 is Chalet Comprimé - Cologne 1960
Font 7 is a slightly modified version of the classic Pricedown

For a while I thought they used Helvetica for the subtitle fonts. As it turns out, apparently R* bought a corporate licence for some of House Industries' typefaces besides the infamous House Script.

The text used is a Pangram = a sentence that uses every letter of the alphabet .

 

The English equivalent is: "The quick brown fox jumps over the lazy dog​​"

 

I use the French version because we can also see the accents !

Font 3 is particularly interesting. It seems to be the logos of the three factions from the cut cops and crooks gamemode.
