Cognoscenti Cabrio, I guess. Also the Sentinel.

Non XS version only, for the Sentinel.

 

Cognoscenti has hands down, the best convertible animation in the game.

The Cog Cabrio is a sexy little baby with an awesome convertible animation. Can't think of any other hardtop convertibles, but I'd love it if there were more, as I hate those plastic soft tops on cars like the Felon GT. It would look so much better if it had a hard top.

That is per definition a soft-top (non-metal roof) ergo not a hard-top.

 

OP as far as I know there are only the Carbonizzare, Sentinel (non-XS) and the Cognoscenti Cabrio as others have mentioned. 3 in total.
