1. Shooting. From being a small feature, to a main game physics priority in GTA, mostly in the storyline, buying guns, to now being able to fully customize them.

 

2. Driving. Driving is a main aspect in the game, there are now alot of cars featured in GTA V, and full car customization is available. Driving mechanics has improved alot more.

3: Mobile/cell phones. In VC/SA they were just bricks only capable of recieving calls. GTA IV/V have evolved them to be as connectible as the real thing.

4. Radio stations. When they started they were each a sound file that looped continuously. Now they've got DJs that report story-dependent news, give real weather updates, and the songs aren't played in a set order anymore.

 

5. Storefront displays. From low-res textures, to slightly higher-quality textures! (At least they're mostly unique now.)

7. Map - Not only has the map got bigger in scale, but they evolved their ideas on making it more alive, and believable with numerous details and other improvements.

 

8. Multiplayer - A completely separate and evolving world altogether with the launch of GTA ONLINE!

9. Level Of Detail: Details started to get more and more, since Vice City.

 

10. Side Missions: From simple 'Kill Frenzy' riots, to diverse world of 'Strangers and Freaks'.

 

11. Easter Eggs and Hidden Stuff: I completed vice city and all i got was this lousy t-shirt.

13. game went from top down to 3D to HD

14. there are no few of the same peds in the same area like in 3D games,now they at least have different clothes or haircuts

15. now there are many different vehicles,as the games progressed we got motorcycles,bicycles,submarines...

17-Protagonists: From having 8 same looking protagonist in GTA to 3 completely different Protagonists in GTA V.

23. Car jacking. Characters used to be limited to 2 - 3 animations when stealing a car, now you have multiple animations that can be done with multiple weapons. Not only that, but windows must be broken on locked vehicles in order to steal them.

25. Graphics. From a top-down game with no depth, to blocky 3D, and finally to highly detailed 3D.

I did in this post:

13. game went from top down to 3D to HD

They were better days, phones should return to only being capable of receiving calls (and maybe some other very minor things).

29. Supporting Character

In most of the 3D Era game, we didn't see much of there other character outside of missions and there wasn't much dialogue between the characters, but now we have conversations between the characters that open up more about their life. It just gives them more personality.
