Can anybody look up your career $earnings on social club?

i have my privacy settings on "only me" is this good enough to keep it all hidden? or do i need to delink my whole social club from my players account to keep all my privacy?

You should be fine. Just be cautious of to who you give your SC name to, If it bothers you that much, because your stats can be seen on GTA Online sites that are dedicated to player stats.

But yeah OP, you should be fine. I had mine hidden from public and it didn't show up on GTA stats.

 

But the moment I made it public so I can add missions to my bookmarks, it started to show up.

Someone needs your Social Club name. Once they have it, they can look you up forever, even if you delete your social club acct. GTA5stats doesn't recognize PSN ID's or Xbox live gamertags.

You can bypass the "This user's profile is hidden" pop-up screen by entering "/games/gtav/career/overview/gtaonline" at the end of the URL containing a member's hidden profile (make sure to delete "?headSearch=True", if it's at the end of the URL). So yes, people aware of that trick and GTA5Stats.com can see your game information.
