Everybody is rich, so I think it will hard to come up with a solid reason for them to start robbing again, unless it's something more unique. I think R* is saving some entertaining stuff for DLC. GTA V has a much lighter tone than IV, but it's very similar to IV when it comes to weapons and vehicles for the most part. The way V feels, I would expect to see more interesting weapons(think SA) and more unique vehicles. GTA V is extremely basic in that area. Nothing is out of the ordinary, and I'm not talking about unrealistic stuff. R* has too much real stuff they could include that would be extremely unique and fun. I also think R* might take things back a bit. Maybe they consider "C" canon, but it could be more interesting to go back. I don't know how far back, because it could get weird if we switch to Franklin and he's a 15 year old gang banger or something, and Michael and Trevor would be in another state.
