Sabre Turbo for sure. I've had them all, but the Sabre is the best, Dominator in second place, but you really need to know what you're doing in that, or it slides all over the place. Driving the Dominator can be a cool experience once you learn to start a power slide around a corner VERY early. I've won races where I was taking corners like that. You start to go full speed down a straight stretch. Then comes a corner. You start power sliding early and if someone is in front of you, you overtake them in the coolest possible way. They're slowing for the corner, but you glide past them and come out ahead of them. Corner won. Can be done in the Sabre too, and that muscle with the black top.

Considering muscle cars can barely get around a corner (with the exception of those built outside the US and the Dodge Viper models) I think I'd rather have it handle like a sedan considering sedans have decent handling.

Sabre Turbo is my muscle car right now, haven't tried out the others with mods enough yet tho...waiting on that 2nd garage

After looking at these posts I bought a vigero.It's a great car and with one or two engine upgrades it can even keep up with a dominator.Plus you never see one around so it stands out as something special in races.

It's been in every 3-D GTA Game since III. Untill V that is.

 

Anyhow my personal fav is the Ruiner in IV, good preformance, cheap to replace, and I love the way it looks. Could use better mods though.

I creamed a dominator, Chrominator and a ruiner earlier in a Gauntlet. Non of them could keep up at all.

Yeah like I said, the Gauntlet is a great car. It's actually my preferred muscle car for racing.
