Once the cashier hands you the money and puts his hands up, fire a couple shots over his head and he will run and hide in the back room. No worries about getting shot in the back and no extra star. Robbing multiple stores in a short amount of time will make you get more stars each time you rob one until you start getting 4 stars just for pointing the gun at the cashier. I wish the store robberies payed out more, but really they are only for you to get money when you can't even start a race. I do wish there was more places to rob. When you are really bored, start hanging out at ATMs and play The Knockout Game with the NPCs who use them. You can get a couple hundred off them. You can get a couple hundred off them. another you can do during robberies is if you rob a store with more than one register , shoot the other one that isnt being used , you will usually get an extra 50 to 100 bucks each time . and while doing a mission and you see a store , go inside , shoot the registers for a couple hundred extra. At the end of a survival, you get $20,000 and they tend to last about 30 minutes if I recall. Subsequently, a store gives you a little more than $1,000 and there are twenty of them. So if you were to rob all of them, say, using a heli, then you would get $25,000 or even $30,000 in about the same time. And personally, I think that sounds a lot more fun than a survival; which seems to drag on and gets boring pretty quickly.
