I have read online that clearing cache will solve the PS3 freezing issue, but even after researching on Google I canot find a SAFE way to delete the new update and re-installing w/o wiping out my whole game.

Can anyone provide instructions?

I have this issue and i'm on almost new* PS3. Have installed only GTA V and Colin Dirt 2 so its not fault of filled HDD or cache or anything that R* says.CLEARING CACHE WILL NOT HELP YOU! It fault of patch for 100%. Before install it game runs fine in both - Online and SP. now runs fine only in SP, online have random freezes. I suggest players to not play to Online untill they release new patch beacuse often hard resets will kill your console. Everythin which R* says was tested and not working, dont belive its fault of your console. If game hangs to you in online sesion it happens to everybody from that session and it happens on XBOX's an PS's. I'm mad as other players but remember - its better wait for some weeks for new patch than months for reply from service if your console will die and you will must pay for it. Still not sure that this is not your console? Try to play for SP (Single Player) for 2 hours. If console will hang this can be its fault, if not you can be relax and wait for next update. FOR NOW DONT RUN YOU ONLINE or you will kill your console!

* I writed almost new beacuse its from service, changed for new. I killed my old console beacuse of that sort of bugs (freezes by games and hard resets)

But if you HAVE TO, you can clear it. Go to "data utility" option above tha game you have inserted to drive, and find GTA V. You should have GTA V - install (leave it) and GTA V (it should have size of 143mb (maybe less maybe more - i dont remember exacly) and click triangle and delete it. Then start game with internet connection to update it again (or not if you wanna play only in single player). Game will download update and start. But this is not fault of cache

First things first, don't get your hopes high, I seriously don't think deleting the update data/game data would do any good to you.

there's no safe or un-safe way of deleting the update data. There's only one way. even if you possess a 'jailbroken' system (you can delete them with manual tools, but there's not that much of difference). You go to the 'Data Utility' in 'Game' section of the main UI, and then delete the update. but to be sure, first check out the information. it should give you the version number and the install size. and if you didn't have problems before 1.11, just install the previous patch(es) [ which depends on the region of your disc, you can find the pkg files easily over the internet, though I don't know if it's possible to install them on a stock (unjailbroken) system ] and run the game offline to see if it's really related to the update ( which again, I don't think that's the case. )

and as the final guess, maybe your disc is damaged ?

it's not just because of the update, people (including me) have had it already before.

take a look at my signature for a solution

edit: just noticed this thread is 3 weeks old, maybe OP already got it fixed.
