Look in your settings if you can turn down the sensivitiy for the thumbsticks. Also, practice using the tip of your thumb to do small flicks of the thumbstick instead of pushing it. Bikes can take some time to get used to so the best thing would be to try the most bikes you can and see which fits your driving best.

For a boost of speed on straightaways, push the left analog stick forward a bit. Just be careful when braking/slowing down or you might do an ass over teacups.

Its quite simply really bro, just try not to move your analog stick vigoursly. Once you've mastered that, you'll see improvements straight away.

Pretty much this.

Go on long bike rides like I do, and you'll master the art of riding a bike.

Hey, if your bike wants to be gay then it's his choice. Don't try to change his sexual preferences, man, it ain't cool.

Nobody has mentioned this yet- watch your forward/back pressing with the left stick. It does nothing to camera so you may not notice, but pull back and your turns are wider and slower, push forward and your turns are tight and squirrelly. In IV this made you lean but they f*cked that part off for V.

Turn off the "Motion Sensor" setting for bikes in the Controller settings.

The bike leaning drove me nuts until someone on the forum told us about this. The Motion Sensor is defaulted to "ON" for bikes, cars, planes.

I didn't even know the controller had a motion sensor.
