The girl is Kerry McIntosh. She appears in one of the Vinewood Souvenirs missions you have to do for Nigel and Mrs. Thornhill.

Theres nothing in audio files of heist update about horses.

About horses... Do they have some "vehicle" values in the code, or are they just NPC?

in the gameplay trailer, the scene where the cuban flies over the train bridge, the train is actually going the opposite direction of the train in the released game, not anything big but it's still part of the hunt I suppose

After reading every post in this topic so far, I'm surprised that I didn't see anyone mention (If it was mentioned, I must have missed it, sorry!) that the cut loudhailer/megaphone, while no longer an item the protagonists can use, is in fact used by a Sheriff officer N.P.C. during The Paleto Score mission:

 

This may or may not indicate that, in the final game, it is a separate/dynamic object beyond a static prop seen elsewhere in-game. It is obviously not built in to the N.P.C.'s model itself; with modification know-how, could it possibly be used with a protagonist? This cutscene at least shows that it is movable in some shape or form. Hmm....
