Just press and hold down on the D-Pad and push X (or A if you're on Xbox One) to start recording a clip. When you're done, you can start up the Rockstar Editor on the pause menu and edit said clip to make a machinima, as well as take snapmatic pictures by pressing square (or X on Xbox) to take them.
