Changing their console clock to December 25th to bring back the snow? Somebody posted about doing it on ps3 but I have xbox and was wondering if anyone had any luck.

It uses the server's datetime, not your console's so it won't work. The only way (currently) to get snow back is to use a DNS server.

What in the... why would rockstar only add it for Christmas are they trying to say to not spend time with your family and friends and go play a broken down game because they added snow? At least add it till January 5th like the items
