After completing the Humane Labs Heist, the characters will celebrate at Vanilla Unicorn. It looks like it is Sapphire behind the bar serving them drinks. To be fair I can't be 100% as her face isn't in shot, but it is her outfit and hair. It is definitely not the normal barmaid's attire.

You are, but please try to make them as clear and understandable as possible for everyone. Anyway, I prefer to give clues strictly about GTA V/O. The main objective of this game is to let the players learn more about the story of GTA.
