Flying increases your driving skills. 
 

Noticed this in the helo. Pretty sure it works when you’re flying over roads. Reminds me of how the Dodo would trigger the Stunt Jumps in III.

The old PS3 and Xbox360 versions of the GTA V can support the original physics from GTA IV before they were downgraded, you can mod them in if your console is jailbroken:
