I feel I've seen every racing and parachuting course on the map. Will Rockstar be creating new ones to keep things spicy or is this it?

Once the content creator drops there will be an endless amount of choices.

Yea 1 lap and gain 10k in 20 seconds. Will the best creations be offcially added to the map?

I doubt they will be added to the map as it would get horribly cluttered. Likely have to access through the pause menu.
