What's the deal with Killing someone then leaving lobby?

Had this happen to me twice.

probably because you always come back alive so they try run before you can stab them

Fear of getting kicked by griefed player. Unless they fixed the kicking system so that one player can't kick another for no good reason, haven't gotten kicked myself but I've read that players can be easily kicked by another.
