Flying - Pitch and Roll

I'm having a MAJOR issue with GTA V at the moment. I started playing the game the day after release, and I was able to fly a helicopter/plane almost perfectly. I'm playing on the PS3 and it used to be that when I tilted the left analog stick forward, the helicopter would pitch forward. I have no idea why, but since the last update I can't fly a helicopter with any of the characters. I can't even complete flight school because the aircraft automatically rolls back and crashes by itself (as if the analog was being held down). It isn't my controller either. I tried 5 different PS3 controllers, all work great, but the craft still crashes and it won't even fly correctly. (e.g. I hold R2 and the craft rolls back and crashes)

Yes, my settings are at default and the controls are the same. Is anyone having the same issue? I can't pass the game because one particular mission requires me to fly a military helicopter... very IRRITATING! Also, I have tried deleting the game data and reinstalling it, but that doesn't work either?
