What your player does?

So the thing Rockstar put out says in character creation you choose how much the party or not or if they do illegal or legal activities, the list goes on. Does anyone know if this effects how people act toward you in the game. Or does this force you down a certain path?

It was said that these traits will affect your players stats, similar to but different from the single player stats, such as stamina, shooting etc. you will be able to level up these stats by playing but everyone will start of with different advantages/disadvantages decided by the character traits.

Yup, what Tony said. So if you choose a hitman-style you might have a higher stealth/strength/driving/and shooting that if someone choose athletic guy where you might have near-to-max stamina and strength.
