The problem with Red Dead was, you couldn't beat people to death. They just kept getting knocked out and regaining consciousness. I think if you beat someone up, they should get knocked out. I found it funny tbh, because its only when you punch someone with no guard up that they die instantly, like from behind etc. If you actually give abuse to a ped with the right button, and wait for them to start the fight, it will take about 5 or 6 hits to kill them. Try to jump in the Ambulance and one of the Paramedics tries to stop me. And in the process gets hit by a car. His buddy turns the other way and walks away. The paramedics not reviving is something i definitely miss ill admit. But i love the punching in this game, you really get to one bomb the peds haha. you can easily have a proper fight with them and not oneshot, but i remember the first punch i did in the game was on a balla, i basically one bombed him, and then ran away with 20 ballas chasing me down the street haha.
