It has been confirmed by Rockstar that there are more weapons this time than any other entry in the GTA franchise. On top of that, it is confirmed that we can modify our weapons and tailor them to our play styles. It's also highly likely that we can further upgrade our shooting ability online, and surely all of these options at our disposal will make our one firearm exceed expectations. Imagine every single online game being players diving around with dual Mac-10 submachine pistols and Desert Eagle .50AE pistols; it's going to feel cartoonish and lose that HD universe grit.
